This is not a subtle flavor at all. It's crazy good, though, especially if you're a cayenne fan.
One very small yellow onion, chopped
One entire garlic (yes), minced
Two tablespoons of ginger, minced
Two tablespoons of lime juice
Three tablespoons of olive oil
Four tablespoons of soy sauce
Four tablespoons of peanut butter
Cayenne pepper to taste
1/2 a cup of spinach, frozen
2/3 a cup of rice, uncooked
2/3 cup water
Start boiling the rice normally; usually that's two parts water to one part rice, boiled for fifteen minutes. This is not the water listed above, we'll use that in a minute. Heat up the oil in a medium frying pan, then add the chopped onion. Right before the onions are tender, add the minced garlic. After a minute or so of stirring, add the ginger and turn the heat down to medium. Don't burn the ginger, it can only stand about a minute of frying or less. Add the water, peanut butter and soy sauce. Stir until this is all bubbly and smooth, then add the spinach, lime juice and pepper. When it's all heated through, it's done.
Pour the sauce over the rice. This makes about two servings.
